Children have always had a love-hate relationship with vegetables. Especially ones that are known to be healthier. They’re notoriously selective with the kind of veggie meals they like and the ones they don’t. Indian mothers always have to get creative with their meal planning to ensure their little ones consume the veggies they need in order to receive the nutrients their body requires. Thankfully, one of the most creative ways to go about this is to add these veggies to Pasta. Because every Indian kid adores Pasta. Why wouldn’t they? It’s luscious and filling! Indian Masterchef, Sanjeev Kapoor has developed an interesting creamy pesto pasta recipe using Nutralite mayo. Particularly, the Cheesy Garlic Mayonnaise. And the best part is, you can make this delicious recipe by Sanjeev Kapoor at home!
1 bunch spinach, washed and chopped

Boil spinach leaves and corn kernels. Sauté chopped onions in a pan, add the boiled spinach, and mix well. Blend the mixture for a consistent texture. Combine with crushed corn and Nutralite Veg Mayo. Nutralite Veg Mayo is enriched with vitamins A, D2 & E.
Cut out the sides of the bread slices, then flatten the bread slices with a rolling pin. Spread a generous layer of neutral veg mayo on bread slices. Place the spinach and corn mixture evenly on each slice. Roll the bread slices tightly to form a log. Refrigerate for a while to set.
Once the pinwheel log has been set, slice it into rounds. Arrange on a plate, and your Nutritious Spinach and Corn Pinwheels are ready to be served.

1 tsbp Oilive Oil
1 tbsp Garlic
½ Cup Baby Corn

Maintain a slight rawness to it. It will get cooked further once it is added to the Pesto-Veggie mix.
Chop the broccoli into small pieces and toss it into boiling water for 2 minutes. Once you’ve done this, toss the boiled broccoli into a bowl of clean, cold water.
It is advisable to prepare the Pesto Pasta Sauce beforehand and keep. It is made with basil leaves. Usually it is made with Pine nuts, but you can also use peanuts, walnuts or almonds. Roast the nuts you’re using for added flavor and crunchiness. You can also add garlic, parmesan cheese and salt
In a large enough container to hold the size of your serving of Pasta, pour 1tbsp olive oil and bring it to a boil.
Add 1 tbsp ground garlic to the boiling olive oil and spread it around the container.
Add ½ cup boiled corn to the mix. Corn will add some crunchiness and delicate sweetness to the Pasta.
Add 1 red capsicum and sauté it
It’s time to add two cups of boiled pasta to the mix, along with ½ cup of water. Gently shake the pot to ensure the boiling water is spread evenly throughout the pasta mix.
Add 2 tbsps of basil pesto to the mix.
The next step is to add 2 tbsps of water to the mix and gently stir it as it sizzles.
Add 3 tbsps of Nutralite Cheesy Garlic Mayo spread to the mix along with ¼ cup of water and stir it. This mayo spread gives your child 15% of their recommended daily allowance of Vitamins A,D2 and E
To add some flavor to the Pasta, add a pinch of salt and red chilli flakes to the mix.
Finally, add the broccoli to the mix and stir it for a final time. Once you get the right essence of prepared Pasta, it’s ready for your kid’s lunch box.
This simple pesto pasta recipe will transform your child’s lunchbox into a nutritious, yet tasty meal that stands out because of its delicious aroma! Your kid will enjoy their meal and get their fill of veggies into their hungry tummies!
Butter chicken, also known as “murgh makhani” in Hindi, is believed to have originated by chance in Delhi, India.
Legend has it that it was created in the 1950s at the Moti Mahal restaurant when leftover tandoori chicken was mixed with a rich, tomato-based gravy, and the result was the now-beloved dish, butter chicken. This is a testament to how some of the most iconic and delicious recipes are often born out of culinary experimentation.
