Ingredients In Mangalore Ghee Roast
For the Chicken
- 1 kg chicken
- 6 cups water
- 6 tbsp salt
- 1 tsp turmeric powder
For the Masala Paste
- 20 Byadagi chillies
- 6 tbsp Nutralite Doodhshakti Pure Ghee
- 3 tbsp coriander seeds
- 2 tsp jeera
- 1 tsp saunf
- 1/2 methi
- 2 tsp pepper
- 12 cloves of garlic
- 1 marble-sized tamarind pulp
- 1 tsp jaggery
- 1 tsp salt
- 10-12 cashews
- 2 sprigs Curry leaves
How To Make Mangalore Ghee Roast
Marinate the chicken in some turmeric powder. Once this is done, brine the chicken to make sure it remains juicy even with a long cooking process. Add enough water to cover the whole chicken. With every cup of water you add, add a tbsp of salt and then set it aside for an hour. Before you melt some ghee, drain any remaining water to get rid of excess salt. Once that is done, melt 1 tbsp of ghee in a pan with the chicken. Fry it until it is ¾ cooked and set it aside.
Soak some byadagi chillies in warm water for 15 minutes. In the meantime, add some coriander, jeera, methi and sauf seeds and some peppercorns to a pan and roast them. Add the roasted seeds to a grinder along with the soaked chillies, some garlic and tamarind. Blend it together and add some water to turn it into a smooth paste.
In a deep-bottomed pan, add 1-2 tbsps of pure ghee and melt it. Add the masala paste to the melted ghee, fry it and keep adding more ghee if it dries out.
